Preparation

Iberico Secreto

In this recipe, Otto shows you the most delicious and tender secret of the Iberian pig: the Iberico Pork Secreto. It is so mysterious, as the fibrous and fan-shaped muscle of the Spanish Iberico pig (Cerdo Ibérico) lies hidden between the back and back fat. If the cut of the butcher is not set correctly, it is hardly recognizable and therefore it is called a secret or a hidden fillet. Of all the meat cuts of the Iberian pig, this is the fattest one and therefore has a very intense taste. The strong marbling of the meat makes it perfect for cooking on the Otto Grill. In the following recipe, we’ll tell you how to best prepare this particular meat.

1

Prepare the Pork Secreto

Remove the meat from the refrigerator and allow it to reach room temperature before grilling. If you have too much fat at some places, you can remove it. But always keep in mind: fat makes flavor

2

Homemade herb sauce

First, prepare the herbal and ginger sauce so that it can still infuse a little. The sauce goes perfectly with Ibérico pork and gives it a fresh herbal note.

If you use whole peppercorns, you should first grind them in a mortar, because later with the other ingredients it will be a bit difficult to crush the grains. Then, chop the garlic, ginger and chilli as well as the fresh coriander and parsley as fine as possible and add them to the mortar. Now, gently crush the herb spice mixture with the pestle for a few minutes and gradually add oil and lemon juice. When choosing olive oil, you should pay attention to good quality: It is best to use a mild oil with the highest quality “extra virgin olive oil”, so that the herb sauce does not get a bitter taste. Then pound it all the way until the flavors of the fresh herbs and spices have combined perfectly with the oil to form a creamy mass. Finally, you can salt according to your taste. Then put the sauce aside.

 Prepare the thai mango salad

Peel carrots, cucumber and mango and cut them into thin slices – you should make sure that the core of the cucumber is removed beforehand, because only the solid meat of the cucumber will be used.

Then lightly crush the garlic and peppercorns in a mortar. Add carrot slices and continue pounding with the pestle to make the carrot fibers a little tender.

Now you add brown sugar, fish sauce, lime juice and mix everything together. Add mango and cucumber slices. Crush everything lightly and mix – but make sure that you do not exert too much pressure, because the cucumber and the mango should remain a bit crunchy.

Put the salad into a bowl. Halve the cherry tomatoes and roughly chop the fresh coriander. Stir in the tomato halves, coriander and peanuts and your delicious summer salad is ready to eat!

 How to grill Iberico Secreto

Now it’s time for the main character of our recipe: the Iberico Pork Secreto. First, preheat the Otto Grill onto 1500°F for 3 minutes. Better keep the grid off the grill while preheating. This way you make sure that your steaks don’t get pre-cooked on the hot bars.

As soon as the Otto Grill is hot, you set the Meat-O-Meter to level 3. Grill the Pork Secreto from both sides about 60 seconds – make sure to always pay attention, because the Secreto is a very thin cut and might burn easily. Afterwards let your steak rest a bit at the bottom of your grill.
